Castagnaccio [Chestnut cake]
Ingredients
gr 500 chestnut mealgr 50 pine nuts
gr 50 walnuts
gr 100 raisins
gr 50 olive oil
rosemary
salt
Method
With a wooden spoon dissolve the chestnut meal in water, then add the pine nuts, walnuts, raisins, oil, the leaves of a large sprig of rosemary and a pinch of salt.Pour this fairly thick mixture into a baking tray greased with oil and place in a moderately hot oven. Bake for about 1 hour, until a brown cracked crust has formed on the surface.
